Bad and Boozy Royal Cupcakes

 

I made these Crown Vanilla cupcakes for my bachelorette party, and for my friend’s 30th birthday party. Let’s just say they didn’t last long, and the turn ups were real!



Ingredients:

Cupcakes

  • 1 box yellow cake mix (sorry, Sis.  Smarter, not harder.  Pref Pillsbury)
  • 1 box Jello-o instant vanilla pudding
  • 4 eggs
  • 1/2 cup coconut oil
  • 1/2 whole milk
  • 1 1/2 tsp vanilla extract
  • 1/2 cup Crown Royal Vanilla

Boozy Icing

  • 1 stick unsalted butter (room temperature, preferably sweet cream)
  • 1/2 cup Crisco vegetable shortening
  • 3 1/2 – 4 cups powdered sugar
  • 5 tbs Crown Royal Vanilla
  • 1 tsp vanilla extract

Toppings

  • 12 pipettes (I ordered mine from Amazon)
  • Maple Bacon (approximately 6-8 slices, crumbled)
  • Caramel drizzle (I use Duncan Hines “Perfect for 1”)
  • Approx 1/2 cup Crown Royal Vanilla (for filling pipettes)

*Note- I usually make 12 cupcakes and have plenty of batter left over, which I then use to make my own personal cake in a small loaf-sized pan.


Directions:

  1. Preheat the oven to 325 degrees.  Grease your cupcake pan and place your cupcake liners in the pan.
  2. Add the cake batter, pudding, eggs, vanilla, coconut oil, and milk into a large mixing bowl.  Use a mixer to mix all of the ingredients together until smooth and free of visible lumps.  Then add the Crown Royal Vanilla and vanilla extract and mix it in.
  3. Spoon the cake mix into the cupcake liners, leaving some space at the top (appr 1/4 to 1/2 inch).  Do not overfill.  Bake at 325 degrees for approximately 23-27 minutes.  (Start checking them around 23 minutes. They’ll be ready when a wooden toothpick can be inserted in the center and comes out clean.)  Allow the cupcakes to cool off before adding icing.
  4. Mix the stick of butter and the crisco together using a mixer.  Add the powdered sugar, one cup at a time, then add the Crown Royal Vanilla and the vanilla extract (adjust the alcohol for desired potency, while being mindful of the consistency of the icing).  Use your favorite frosting tip and an icing bag to add the icing to the cupcakes.
  5. Crumble the bacon over the cupcakes (recommend leaving a few without bacon in case anyone doesn’t eat pork/meat).  Drizzle the caramel over the cupcakes.
  6. Fill the pipettes with Crown Royal Vanilla and insert them into the cupcakes.  (use of the pipette’s is dealer’s choice.  Take them as a shot, or squeeze them into the cupcake before eating and you’ll get a very rich and very strong treat.
  7. Take a picture of your hard work for the gram, and enjoy! (because they won’t last long!)
